This is such a creamy delicious soup, ( no cream added), and so hearty. Perfect for quick dinner with a salad, and crusty bread. Easy,and Done!

Ingredients

  • 1 large head cauliflower
  • 2 stalks leeks ,cleaned, sliced
  • 2 cloves garlic
  • 1 can white beans,drained rinsed
  • 2 cups vegetable broth
  • 2 cups whole milk
  • - salt and pepper

How To Make cauliflower and leek soup

  • Step 1
    In a large pot sweat leeks,I used safflower oil. Meanwhile, lightly steam your cauliflower, set aside.
  • Step 2
    Add, garlic,saute',for a few min., then add cauliflower,stock,milk, and beans. Simmer,5- 10 min.
  • Step 3
    Use an immersion blender. Serve, or keep warm. A perfect little starter for dinner.
