This is such a creamy delicious soup, ( no cream added), and so hearty. Perfect for quick dinner with a salad, and crusty bread. Easy,and Done!

Ingredients
- 1 large head cauliflower
- 2 stalks leeks ,cleaned, sliced
- 2 cloves garlic
- 1 can white beans,drained rinsed
- 2 cups vegetable broth
- 2 cups whole milk
- - salt and pepper
How To Make cauliflower and leek soup

Step 1In a large pot sweat leeks,I used safflower oil. Meanwhile, lightly steam your cauliflower, set aside.

Step 2Add, garlic,saute',for a few min., then add cauliflower,stock,milk, and beans. Simmer,5- 10 min.

Step 3Use an immersion blender. Serve, or keep warm. A perfect little starter for dinner.
