Ingredients
- 01/2 cup onions chopped
- 1/2 cup celery chopped
- 1/2 cup red bell pepper chopped
- 1-10 oz can condensed broccoli and cheese soup undiluted
- 1/4 cup sour cream
- 1/4 cup water
- 2 cups cooked rice
- 1-10 oz package frozen chopped broccoil thawed and drained
- 1 - tomato cut into 1/4 inch thick slice

Step 1Preheat oven to 350 degrees. Spray a 11/2 quart baking dish with non stick cooking spray set aside.

Step 2Coat a large skillet with nonstick cooking spray. Add onion, celery and bell pepper cook and stir over medium heat until tender

Step 3Stir in soup, sour cream and water.Layer rice, soup mixture and broccoli in a prepared dish.

Step 4Cover and bake 20 minutes. Top with tomato slices bake uncovered 10 minutes.
