Ingredients

  • 4 cups vegetable stock
  • 1 tablespoon olive oil, extra virgin
  • 2 cups broccoli fresh stalks peeled and diced
  • 3/4 teaspoon dried thyme crushed
  • 1 medium onion thinly sliced
  • 1 large red apple (cooking type) peeled and diced
  • 1/2 cup celery stalks diced
  • 1/4 teaspoon white pepper
  • 1/4 cup yogurt, plain
  • 2 tablespoons parsley minced
  • 1 1/2 cups cooked rice

How To Make broccoli apple soup with rice

  • Step 1
    Heat oil in a large pot with lid. Add broccoli, thyme, onion, apple and celery
  • Step 2
    Cover and cook over low heat 10 minutes.
  • Step 3
    Add vegetable stock and pepper cook 30 minutes more
  • Step 4
    Remove from heat and cool slightly. Puree 1 cup at a time in blender. Then add rice.
  • Step 5
    Serve hot garnish with a dollop of yogurt and sprinkle with parsley.
