You NEED this recipe after consuming any holiday turkey. I've made this delicious, hearty, crowd-pleasing soup for over 16 years. It only asks for 2 cups of your left over chopped turkey.

onions, chopped
1 pkg
taco seasoning mix

chicken broth
2 c
turkey, diced
28 oz
green chile, diced or 4-7 oz cans chopped
16 oz
tomatoes, diced
10 oz
corn, frozen
1/3 c
cilantro, diced
1/2 c
monterey jack cheese, shredded
1 pkg
tortilla chips, enough to top each bowl

How to Make Turkey Tortilla Soup


  • 1In a 5 qt. saucepan, over medium heat, saute onion in oil 3-4 min. or until soft.
  • 2Stir in chile, cook 1 minute. (If you can get fresh or frozen green chile that is best. If not, use four 7 oz cans of chopped.)
  • 3Add tomatoes, stir in taco seasoning packet, turkey and broth. Add corn and reduce heat to simmer until soup is hot and bubbly.
  • 4Add cilantro. To serve, spoon soup into bowls. Top with tortilla chips and grated cheese.
