Turkey Tortilla Soup
You will never cook a bird again without reserving turkey for this soup......GUARANTEED!
1 tspolive oil
1 conions, chopped
1 pkgtaco seasoning mix
6 cchicken broth
2 cturkey, diced
28 ozgreen chile, diced or 4-7 oz cans chopped
16 oztomatoes, diced
10 ozcorn, frozen
1/3 ccilantro, diced
1/2 cmonterey jack cheese, shredded
1 pkgtortilla chips, enough to top each bowl
How to Make Turkey Tortilla Soup
- In a 5 qt. saucepan, over medium heat, saute onion in oil 3-4 min. or until soft.
- Stir in chile, cook 1 minute. (If you can get fresh or frozen green chile that is best. If not, use four 7 oz cans of chopped.)
- Add tomatoes, stir in taco seasoning packet, turkey and broth. Add corn and reduce heat to simmer until soup is hot and bubbly.
- Add cilantro. To serve, spoon soup into bowls. Top with tortilla chips and grated cheese.
