    fresh spinach
  • 1 small
  • 1 1/2 pt
    white stock
  • 1/2 pt
  • 1 1/2 oz
  • 1 oz
  • ·
    pinch nutmeg
  • ·
    light pepper and salt

How to Make Spinach Soup


  1. wash the spinach well. Remove the stalks, put the spinach in a pot with just enough water to cover the bottom, add the shredded onion and cook till tender about 1 hour. drain and place in a blender and blend until soup. melt the butter in a pan, blend in the flour, add the stock, spinch mixture from blender, milk, nutmeg add all these to the pot and mix. add your salt and pepper to taste. serve warm
