this is a very good recipe in the summer but its good all year.

Ingredients

  • 2 pounds fresh spinach
  • 1 small onion
  • 1 1/2 pints white stock
  • 1/2 pint milk
  • 1 1/2 ounces butter
  • 1 ounce flour
  • - pinch nutmeg
  • - light pepper and salt

How To Make spinach soup

  • Step 1
    wash the spinach well. Remove the stalks, put the spinach in a pot with just enough water to cover the bottom, add the shredded onion and cook till tender about 1 hour. drain and place in a blender and blend until soup. melt the butter in a pan, blend in the flour, add the stock, spinch mixture from blender, milk, nutmeg add all these to the pot and mix. add your salt and pepper to taste. serve warm
