You can really add just about any other veggies you happen to have to this basic recipe. Think potato peels, cabbage, turnips, mushrooms, squash etc...Basically anything that is hanging around in the fridge I will throw in to this broth!

yield makes 8 cups of stock - can be frozen

Ingredients

  • 8 cups water
  • 3 cloves garlic - minced
  • 1 large onion, quartered
  • 3 - carrots
  • 2 - stalks celery
  • 1 1/2 teaspoons salt
  • 2 tablespoons fresh parsley - chopped
  • 4 - green onions
  • 1 - bay leaf

How To Make homemade vegetable stock

  • Step 1
    Cut carrots, Celery and Onions into 1 inch pieces
  • Step 2
    combine all ingredients in a soup pot
  • Step 3
    Simmer for about an hour
  • Step 4
    Scoop out vegetable pieces and discard
