You can really add just about any other veggies you happen to have to this basic recipe. Think potato peels, cabbage, turnips, mushrooms, squash etc...Basically anything that is hanging around in the fridge I will throw in to this broth!

Ingredients

8 c
water
3 clove
garlic - minced
1 large
onion, quartered

carrots

stalks celery
1 1/2 tsp
salt
2 Tbsp
fresh parsley - chopped

green onions

How to Make Homemade Vegetable Stock

Step-by-Step

  • 1Cut carrots, Celery and Onions into 1 inch pieces
  • 2combine all ingredients in a soup pot
  • 3Simmer for about an hour
  • 4Scoop out vegetable pieces and discard
