You can really add just about any other veggies you happen to have to this basic recipe. Think potato peels, cabbage, turnips, mushrooms, squash etc...Basically anything that is hanging around in the fridge I will throw in to this broth!

Ingredients
- 8 cups water
- 3 cloves garlic - minced
- 1 large onion, quartered
- 3 - carrots
- 2 - stalks celery
- 1 1/2 teaspoons salt
- 2 tablespoons fresh parsley - chopped
- 4 - green onions
- 1 - bay leaf
How To Make homemade vegetable stock

Step 1Cut carrots, Celery and Onions into 1 inch pieces

Step 2combine all ingredients in a soup pot

Step 3Simmer for about an hour

Step 4Scoop out vegetable pieces and discard
