This soup tastes absolutely heavenly; hence the name! I needed to use up some broccoli and some potatoes, so I created this, and I think I have found a real winner.

Thick and creamy, this broccoli and potato soup will be a hit whenever it's served. In this recipe, broccoli cheddar soup and potato soup are combined to create the best bowl of soup. Smoky bacon adds a nice pop of savory flavor. We liked the crunch of the croutons on top, too. Serve a bowl of soup on a cold day, or alongside a salad or sandwich.

Ingredients

  • 3 cups fresh or frozen broccoli florets
  • 2 large potatoes, peeled and cubed
  • 6 slices bacon
  • 3 tablespoons butter
  • 3 tablespoons all-purpose flour
  • 1 small onion, chopped
  • 2 cloves garlic, minced
  • 2 cups chicken broth, more if needed
  • 2 cups half and half
  • 1/2 - 1 teaspoons salt, as desired
  • 1/4 teaspoon pepper
  • 1 pinch summer savory
  • 1 pinch thyme, dried
  • 1/8 teaspoon paprika
  • 1/4 teaspoon Worcestershire sauce
  • 2 cups shredded triple cheddar cheese
  • - croutons, for garnish
  • - bacon bits, for garnish

How To Make heavenly broccoli potato soup

We did think more broth was needed. In the end, we added a total of 32 ounces of chicken broth.
  • Cook the broccoli and potatoes in two pots and drain once cooked.
    Step 1
    In separate saucepans, cook the potatoes and broccoli in boiling salted water, covered, until tender, about 10 minutes for each; drain and set aside.
  • Cook the bacon until crisp.
    Step 2
    Cook the bacon in a large skillet until crisp; drain and crumble. Add bacon to the soup and stir thoroughly.
  • Saute the onions in butter until tender.

    In a large saucepan, saute the onion in butter until it is tender.
  • Add garlic and cook for a minute.

    Add garlic and cook another 1 - 2 minutes.
  • Add flour and cook for a minute.

    Add flour and let it cook for about 1 minute.
  • Gradually stir in chicken broth.

    Gradually add the chicken broth, whisking as you pour to work out the lumps.
  • Add half and half and bring to a simmer.

    Add the half and half and bring to a simmer.
  • Stir in cheese, Worcestershire sauce, and seasonings.

    Stir in seasonings, Worcestershire sauce, and cheese, heating over low heat. When the cheese is melted, add the potatoes and broccoli.
  • Stir in potatoes and broccoli.

    Stir in cooked potatoes and broccoli.
  • Stir in bacon.
    Step 10
    Stir in bacon.
  • Add extra broth if the soup is too thick.

    If the soup is too thick, you can thin it out with extra broth.
  • Ladle into bowls and top with croutons.

    Ladle the soup into bowls; garnish with croutons and bacon bits.
