ellen's potato-celery soup
This is a variation of my usual potato soup. I created this one simply because I had a bunch of celery I wanted to use up. It was deemed very tasty by my boyfriend, and I agree. 10-31-14

Ingredients
- 4 medium potatoes, peeled and cubed
- 1 cup celery, chopped small
- 1/4 cup onion, chopped
- 1/2 cup chicken broth
- 1-1/2 cup half & half
- 1/4 teaspoon salt
- 1 pinch pepper
- 1/4 teaspoon garlic powder
- 1 tablespoon butter
- 1/2 cup cheese of your choice
How To Make ellen's potato-celery soup

Step 1Place celery, potatoes, and onion in a pot of boiling salted water. Simmer for 15-20 minutes; drain.

Step 2Stir in all other ingredients except cheese and simmer, uncovered, for 30 minutes.

Step 3Add cheese and allow to melt completely; serve while hot.
