This is a variation of my usual potato soup. I created this one simply because I had a bunch of celery I wanted to use up. It was deemed very tasty by my boyfriend, and I agree. 10-31-14

Ingredients

  • 4 medium potatoes, peeled and cubed
  • 1 cup celery, chopped small
  • 1/4 cup onion, chopped
  • 1/2 cup chicken broth
  • 1-1/2 cup half & half
  • 1/4 teaspoon salt
  • 1 pinch pepper
  • 1/4 teaspoon garlic powder
  • 1 tablespoon butter
  • 1/2 cup cheese of your choice

How To Make ellen's potato-celery soup

  • Step 1
    Place celery, potatoes, and onion in a pot of boiling salted water. Simmer for 15-20 minutes; drain.
  • Step 2
    Stir in all other ingredients except cheese and simmer, uncovered, for 30 minutes.
  • Step 3
    Add cheese and allow to melt completely; serve while hot.
