ellen's elegant potato-broccoli soup
I started out to make someone else's soup today but found I didn't have all the right ingredients and couldn't go shopping because of the weather--snowed in! So I improvised and came up with a totally different soup which is SO YUMMY! It is so filling you don't really need anything to go with it. Hope you'll give it a try!

Ingredients
- 2 or 3 large baking potatoes, peeled and cubed
- 1 medium onion, chopped
- 4 ounces cream cheese, softened
- 1 can (10.5 oz.) cream of broccoli soup, undiluted
- 1/2 cup chicken broth
- 8 ounces half and half
- 1/2 stick butter
- 1 teaspoon garlic powder
- 4 slices bacon, cooked and crumbled
- 4 ounces shredded cheddar cheese
- - salt and pepper to taste
How To Make ellen's elegant potato-broccoli soup

Step 1Cook potatoes and onions in boiling water, covered, for about 10 minutes; drain.

Step 2Add cream cheese and broccoli soup; mix well.

Step 3Stir in 3/4 of the crumbled bacon and 3/4 of the shredded cheese. Add garlic powder, chicken broth, and half and half. Stir until well combined.

Step 4Add the butter, salt and pepper, and cover over low to medium heat until butter has melted.

Step 5Stir again to combine all ingredients; simmer until hot. Serve immediately with the remaining bacon and cheese as garnish.
