Anticipating the coming okra harvest. I want to fix okra more than fried or boiled. I didn't have a sprout of okra last year. GOD Willing I will have a great harvest of okra this year.

1 lb
okra, fresh
salt to taste
fresh thyme leaves to taste
freshly ground black pepper

How to Make EDDIE"S ROASTED OKRA

Step-by-Step

  • 1Preheat oven to 450 degrees. Rinse the okra, and drain on a kitchen towel. ( The okra should be dry ). Trim away the stem ends and tips. just the very ends. Place the okra in a large bowl salt to taste, toss with olive oil.
  • 2Lift the okra from the bowl, leaving behind the excess oil. Place on a sheet pan in one layer. Roast in the oven for 15 minutes ( larger okra may take longer ). Stir every 10 minutes.
  • 3Remove from heat, toss with fresh thyme leaves and freshly ground black pepper. Serve hot
  • 4Oh yes this is great on the grill !!
