eddie"s roasted okra
Anticipating the coming okra harvest. I want to fix okra more than fried or boiled. I didn't have a sprout of okra last year. GOD Willing I will have a great harvest of okra this year.

Ingredients
- 1 pound okra, fresh
- - salt to taste
- - fresh thyme leaves to taste
- - freshly ground black pepper
How To Make eddie"s roasted okra

Step 1Preheat oven to 450 degrees. Rinse the okra, and drain on a kitchen towel. ( The okra should be dry ). Trim away the stem ends and tips. just the very ends. Place the okra in a large bowl salt to taste, toss with olive oil.

Step 2Lift the okra from the bowl, leaving behind the excess oil. Place on a sheet pan in one layer. Roast in the oven for 15 minutes ( larger okra may take longer ). Stir every 10 minutes.

Step 3Remove from heat, toss with fresh thyme leaves and freshly ground black pepper. Serve hot

Step 4Oh yes this is great on the grill !!
