Ingredients

  • 1 1/4 cups vegetable stock
  • 1 - fresh cilantro root, lightly pounded
  • 1 1/2 cups seeded and coarsely chopped cucumber
  • 3 tablespoons finely chopped onion
  • 4 1/2 teaspoons thai fish sauce
  • 1 1/2 teaspoons sugar
  • 2 - scallions cut into 1-in lengths
  • 1 teaspoon garlic flakes

How To Make clear and mild soup with cucumber

  • Step 1
    place the vegetable stock in a pan over high heat and bring to a boil. add the cilantro root, reduce the heat to low, and simmer 10 minutes.
  • Step 2
    increase the heat to medium, and add the cucumber and chopped onion. season the soup with the fish sauce and sugar, stir well, and simmer for about 3 minutes.
  • Step 3
    stir in the scallions, then transfer soup to a serving bowl divide and add the garlic stir slightly and serve
