Ingredients

  • 4 slices bacon, cut into 1-inch pieces
  • 1 medium onion, chopped
  • 1/4 cup all purpose flour
  • 1 quart chicken broth
  • 2 medium red potatoes, peeled and diced
  • 1 medium head broccoli, cut into bite-sized florets, stalks peeled and thinly sliced
  • 1 package (10 oz.) frozen corn kernels
  • 1/2 teaspoon dried thyme
  • 1 cup whole milk
  • - salt and pepper to taste

How To Make broccoli chowder with corn & bacon

  • Step 1
    In a large pot, cook bacon over mediuim-low, stirring occasionally, until crisp, 8 to 10 minutes. Transfer to a paper-towel-lined plate. Increase heat to medium.
  • Step 2
    Cook onion in the same pot until it begins to soften, 6 to 8 minutes.
  • Step 3
    Add flour; cook, stirring constantly, for 30 seconds. Add broth and potatoes; bring to a boil. Reduce to a simmer and cook until potatoes are tender, about 10 minutes.
  • Step 4
    Add broccoli, corn, thyme, and milk. Cook until broccoli is crisp-tender, 8 to 10 mintes. Season with salt and pepper. Serve topped with bacon.
  • Step 5
    NOTE: For a thicker chowder, you may use 1/2 cup whole milk and 1/2 cup heavy cream. Enjoy!
