broccoli and leek soup

I love this soup,it has less than 100 calories a bowl,unfortunately,I eat more than that, it's so good. Also works well with asparagus, and who knew, No cream!! I gotta tell you, this IS, thick, rich, and creamy. Please, if you love soup, and don't want to give up, comfort, foods. TRY THIS.

Ingredients

  • 2 tablespoons safflower oil
  • 1 - potato peeled, cubed
  • 11/2 cups leek, cleaned,sliced(light green,white)
  • 6 cups broccoli florets
  • 6 cups chicken broth, low-fat
  • 2 cloves garlic
  • 1 teaspoon thyme, dried
  • - salt and pepper

How To Make broccoli and leek soup

  • Step 1
    Soften leeks and garlic,add potato,then broccoli. Cook for 3 min.Add broth and thyme, cover lightly simmer for 25 min. Use an immersion blender to puree. Salt and Pepper
  • Step 2
    I like to garnish with grated Parmesan.
