Broccoli and Leek Soup
Also works well with asparagus, and who knew, No cream!!
I gotta tell you, this IS, thick, rich, and creamy.

- safflower oil
- potato peeled, cubed
- 11/2 c
- leek, cleaned,sliced(light green,white)
- 6 c
- broccoli florets
- 6 c
- chicken broth, low-fat
- 2 clove
- 1 tsp
- thyme, dried
- salt and pepper
How to Make Broccoli and Leek Soup
- 1Soften leeks and garlic,add potato,then broccoli.
Cook for 3 min.Add broth and thyme, cover lightly simmer for 25 min. Use an immersion blender to puree.

- 2I like to garnish with grated Parmesan.
