superb fish chowder - cassies

I concocted this delicious chowder for the fish contest in one of the groups I'm a member of...it turned out even better than I expected...very rich and flavorful...I hope you'll give it a try sometime...it truly is scrumptious! Any fish could be used, I just happened to have Cod on hand. Enjoy!

Ingredients

  • 3 tablespoons butter
  • 1 cup onions, chopped
  • 1 1/2 cups 2% milk
  • 16 ounces heavy cream
  • 2 - 8 ounces cream cheese, cut into cubes
  • 1/2 teaspoon each - black pepper, kosher salt, dried thyme and dried dill
  • 1 1/2 - 2 teaspoons better than bullion, chicken flavored paste
  • 4 medium red potatoes, skin on, cubed into bite sized pieces
  • 2 pounds cod, an inch thick and cut into 1 1/2 inch chunks
  • 12 ounces frozen corn , thawed
  • 1 - 2 tablespoons fresh parsley, chopped
  • 1 1/2 tablespoons dry sherry - optional

How To Make superb fish chowder - cassies

  • Step 1
    In a medium saucepan, salt water & boil potato chunks until fork tender. Drain & set aside.
  • Step 2
    Preheat oven to 350 degree F. On a sheet pan or broiler pan liner- spray with nonstick cooking spray. Evenly spread the cod pieces and salt lightly. Bake in oven just until opaque. About 20 minutes. Just until about cooked through. Drain off juice.
  • Step 3
    In a large stock pot, over medium heat - melt butter and saute onions, until tender.
  • Step 4
    To the onions, add the milk, cream, and cream cheese. Simmer and stir as the cream cheese melts into the milks. Now, add the seasonings and bullion paste. Turn heat to low, and add the potatoes and corn. Once fish is opaque gently add it to the pot. Bring back to a full boil, then turn off heat and leave set for about 5 minutes. This is to finish cooking the fish.
  • Step 5
    Now, taste to see if needs more salt or pepper. Stir in the parsley and Sherry & ladle into individual bowls, can serve with rolls or oyster crackers.
