Chili with a twist

This chili is not only hearty and filling it is also good for you! :)

Ingredients

  •   1 lb
    ground chicken/ ground turkey 90% lean or higher
  •   1/2
    onion, chopped
  •   4 clove
    garlic, chopped
  •   1
    green pepper, chopped (can also sub. for a frozen bag of peppers and onions. i get mine from kroger)
  •   1 can(s)
    46 oz tomato/vegetable juice (you can also use a 32oz bottle)
  •   2 can(s)
    of beans (your choice) rinsed
  •   1 c
    of corn (canned or frozen) i like to use the kind with jalapeno pieces
  •   1/4 tsp
    salt and pepper each
  •   1/8 tsp
    ground red pepper (more or less)
  •   1 Tbsp
    ground cumin (more or less)
  •   1 tsp
    chili powder (more or less)
  •   1/4 tsp
    onion powder
  •   1 tsp
    paprika
  •   dash(es)
    of garlic salt
  •  
    sour cream (optional)
  •  
    shredded cheese (optional)

How To Make

    FOR CROCK POT: start off by browning your meat until there is no longer any pink. Add onions, garlic and peppers and saute for a few more minutes.

    Transfer to a crock pot then add all ingredients besides cheese and sour cream.

    Cook on LOW 5-6 hours or until beans are thoroughly cooked.

    FOR STOVE TOP: repeat step one only this time using a deep pot. Add all ingredients except sour cream and cheese.

    Cover and simmer about 30 minutes. Garnish with sour cream and cheese!!
