chili with a twist

This chili is not only hearty and filling it is also good for you! :)

Ingredients

  • 1 pound ground chicken/ ground turkey 90% lean or higher
  • 1/2 - onion, chopped
  • 4 cloves garlic, chopped
  • 1 - green pepper, chopped (can also sub. for a frozen bag of peppers and onions. i get mine from kroger)
  • 1 can 46 oz tomato/vegetable juice (you can also use a 32oz bottle)
  • 2 cans of beans (your choice) rinsed
  • 1 cup of corn (canned or frozen) i like to use the kind with jalapeno pieces
  • 1/4 teaspoon salt and pepper each
  • 1/8 teaspoon ground red pepper (more or less)
  • 1 tablespoon ground cumin (more or less)
  • 1 teaspoon chili powder (more or less)
  • 1/4 teaspoon onion powder
  • 1 teaspoon paprika
  • dash of garlic salt
  • - sour cream (optional)
  • - shredded cheese (optional)

How To Make chili with a twist

  • Step 1
    FOR CROCK POT: start off by browning your meat until there is no longer any pink. Add onions, garlic and peppers and saute for a few more minutes.
  • Step 2
    Transfer to a crock pot then add all ingredients besides cheese and sour cream.
  • Step 3
    Cook on LOW 5-6 hours or until beans are thoroughly cooked.
  • Step 4
    FOR STOVE TOP: repeat step one only this time using a deep pot. Add all ingredients except sour cream and cheese.
  • Step 5
    Cover and simmer about 30 minutes. Garnish with sour cream and cheese!!
