This wonderful soup was in an old cookbook I have and I'd never noticed before. I will definitely be making this--very easy and hearty.

Ingredients

  • 8 c
    water
  • 2 c
    baby carrots, sliced
  • 1 c
    celery, chopped
  • 1 medium
    onion, chopped
  • 2 Tbsp
    minced garlic
  • 1 1/2 tsp
    seasoned salt
  • 1 tsp
    dried parsley
  • 1 tsp
    poultry seasoning
  • 1/2 tsp
    salt
  • 1/4 tsp
    pepper
  • 3
    boneless, skinless chicken breasts
  • 4
    cubes chicken bouiillon
  • 5 c
    fine egg noodles, uncooked

How to Make COUNTRY COMFORT CHICKEN SOUP

Step-by-Step

  1. Place all the ingredients except noodles into a large soup pot. Bring to a boil; cover, reduce heat, and simmer until chicken and vegetables are tender, about one hour.
  2. Remove chicken from broth; let chicken cool slightly. Stir noodles into broth; simmer, uncovered, until done, about 5 minutes.
  3. While the noodles are cooking, dice chicken and return to soup. Serve hot with crackers or crusty bread. So comforting!
