Ingredients

  • 2 - 3 cups cut-up chicken breasts, boneless and skinless
  • 2 cups chicken broth
  • 1 can (14.5 oz.) diced tomatoes, undrained
  • 1 package (10 oz.) frozen corn
  • 1 1/2 cups cubed red potatoes
  • 1 medium onion, chopped
  • 1 medium sweet red or yellow pepper, chopped
  • 1 medium green pepper, chopped
  • 1 can (4 oz.) chopped green chilies
  • 1 teaspoon ground cumin
  • ½ teaspoon garlic powder
  • ¼ teaspoon freshly ground pepper
  • 1 teaspoon salt
  • 1 1/2 cups fresh baby spinach

How To Make all day chicken vegetable soup

  • Step 1
    In a 4- or 5-quart slow cooker, combine the first 13 ingredients. If desired, cut chicken into bite-size pieces.
  • Step 2
    Cook, covered, on LOW for 8-10 hours or until potatoes are tender. Stir in spinach and cook until wilted, about 5 minutes. Serve immediately.
