I came up with this recipe in an effort to prepare a low fat, hearty meal for my family. My 10 years old twins and 12 years old daughter really like the soup, which says a lot. There's truly a lot of flavor in this soup.

Ingredients

beef top round steak, boneless, sliced into thin strips
3 Tbsp
canola oil

yellow onions, chopped
1 Tbsp
hot hungarian paprika or chili powder
1 tsp
black pepper
5 can(s)
seasoned black beans
16 oz
mixed vegetables, frozen
32 oz
cauliflower, frozen
salt to taste
mexican blend shredded cheese
tortilla chips

How to Make Fajita black bean soup

Step-by-Step

  • 1Under medium heat, in a large soup pot or Dutch oven, brown meat for 15-20 minutes Add onions and cook until tender. Add seasonings, adjust to taste.
  • 2Add seasoned black beans and vegetables. Stir well. Lower heat to simmer for 1 hour.
  • 3Add cauliflower and let simmer another 10-15 minutes. Top with cheese and serve with tortilla chips.
