I came up with this recipe in an effort to prepare a low fat, hearty meal for my family. My 10 years old twins and 12 years old daughter really like the soup, which says a lot. There's truly a lot of flavor in this soup.

Ingredients
- 2 1/2 pounds beef top round steak, boneless, sliced into thin strips
- 3 tablespoons canola oil
- 1 - yellow onions, chopped
- 1 tablespoon hot hungarian paprika or chili powder
- 1 teaspoon black pepper
- 5 cans seasoned black beans
- 16 ounces mixed vegetables, frozen
- 32 ounces cauliflower, frozen
- - salt to taste
- - mexican blend shredded cheese
- - tortilla chips
How To Make fajita black bean soup

Step 1Under medium heat, in a large soup pot or Dutch oven, brown meat for 15-20 minutes Add onions and cook until tender. Add seasonings, adjust to taste.

Step 2Add seasoned black beans and vegetables. Stir well. Lower heat to simmer for 1 hour.

Step 3Add cauliflower and let simmer another 10-15 minutes. Top with cheese and serve with tortilla chips.
