My Mother used to make a good pot of stew but I have taken her recipe and tweaked it until it is now my own. What I love about a stew is that you can clean out your fridge when you get overstocked with veggies. You can add pretty much anything you want but still use the basic broth ingredients. And what could be better than a hearty one pot meal that only requires a nice hot and crunchy French Roll by its side!

Ingredients

  • 2 lb
    beef stew meat
  • 18 small
    red potatoes, sliced in half
  • 2 stalk(s)
    celery, sliced
  • 1 large
    yellow onion, sliced
  • 2 c
    baby carrots
  • 2 large
    handfuls fresh green beans, trimmed & split in half
  • 1 - 1 lb. can(s)
    whole tomatoes, puréed, i used hand blender
  • 1-14.5 oz. can(s)
    diced tomatoes w/basil, garlic & oregano
  • ·
    salt to taste
  • ·
    pepper to taste
  • 1 Tbsp
    summer savory, optional
  • ·
    seasonings of your choice
  • 1/4 c
    canola oil, add more if needed
  • 1/4 c
    flour for roux.

How to Make Beef Stew Jeanne's Way

Step-by-Step

  1. In a skillet warm Canola Oil over medium to medium high heat.
  2. Season stew meat with Sea Salt and pepper.
  3. Place meat in skillet in stages (don't overload skillet) and brown. Turn over and sauté until browned.
  4. Place browned meat in a 5 quart or larger slow cooker.
  5. Add flour to oil to make a roux and stir scrapping bottom of pan with spoon to loosen dredgings.
  6. Cook roux until it is golden brown in color.
  7. Add enough water to roux to make a gravy like consistency. Bring to boil and cook until thicker.
  8. To gravy, add puréed tomatoes and diced tomatoes. Season with salt and pepper, Summer Savory (optional) and any seasonings of your choice.
  9. Add all veggies to meat.
  10. Add gravy sauce to meat and veggie mixture.
  11. Stir all ingredients until well blended.
  12. Cover slow cooker with lid and cook on low for 7 to 8 hours
  13. Enjoy a delicious pot of Beef Stew!
  14. Hint:
    If you get a late start on your stew then cook on high for two hours and turn down to low for the remainder of cooking time.
