I was asked to create a cheesy Cauliflower soup for Debbie Loftin... Here is my version.....

prep time 30 Min
cook time 2 Hr
method Stove Top
yield 6 serving(s)

Ingredients

  • 1 stalk butter
  • 1 cup chopped onion
  • 1/2 teaspoon cayenne pepper
  • 1 teaspoon course sea salt - or to taste
  • 1 teaspoon black pepper - or to taste
  • 1 teaspoon carroway seeds - crushed
  • 1 large head cauliflower, roughly chopped
  • 4 cups chicken broth _ homemade or store bought
  • 1/2 cup heavy cream
  • 1 1/2 cups cheddar - grated - or more to your taste
  • 1 teaspoon smoked paprika

How To Make fireman bob's creamy cheesy cauliflower soup

  • Step 1
In a large Dutch Oven, melt the butter, add onion, salt and saute over low heat until tender about 8 minutes. Add cauliflower and continue cooking 6 additional minutes stirring continually.
  • Step 2
Add broth, paprika, cayenne pepper, and cream to pan and bring to boil. Reduce heat to low and simmer, covered, for 2 hours.
  • Step 3
Remove from heat, puree soup in a blender in batches. Return to pan over low heat.
  • Step 4
Whisk in cheese and continue stirring just until melted.
