Fireman Bob's Creamy Cheesy Cauliflower Soup
Here is my version.....
1 cchopped onion
1/2 tspcayenne pepper
1 tspcourse sea salt - or to taste
1 tspblack pepper - or to taste
1 tspcarroway seeds - crushed
1 largehead cauliflower, roughly chopped
4 cchicken broth _ homemade or store bought
1/2 cheavy cream
1 1/2 ccheddar - grated - or more to your taste
1 tspsmoked paprika
How to Make Fireman Bob's Creamy Cheesy Cauliflower Soup
- In a large Dutch Oven, melt the butter, add onion, salt and saute over low heat until tender about 8 minutes.
Add cauliflower and continue cooking 6 additional minutes stirring continually.
- Add broth, paprika, cayenne pepper, and cream to pan and bring to boil. Reduce heat to low and simmer, covered, for 2 hours.
- Remove from heat, puree soup in a blender in batches.
Return to pan over low heat.
- Whisk in cheese and continue stirring just until melted.
