This is a very satisfying soup. My son has never cared for cabbage but he loves this soup. He ate 2 bowls of it the first time I made it and now requests it quite often.

The process of making this cabbage, sausage, and potato soup will have you falling in love with your pressure cooker again or even more. The hardest part of the recipe is waiting for the Instant Pot to come to pressure. Then in 8 minutes, you have a delicious soup. The cabbage and potatoes are cooked perfectly. If you're sensitive to spice, we suggest cutting back on the black pepper and omitting the red pepper because they spice up this soup. The sausage adds a hint of smokiness. This is a great weeknight meal.

Ingredients

  • 1/8 teaspoon cayenne pepper or to taste, optional
  • 2 teaspoons garlic salt with parsley or to taste
  • 2 teaspoons black pepper or to taste
  • 1 cup water or chicken broth
  • 1 medium head cabbage, roughly cut
  • 1 stick butter or margarine, divided
  • 1 package smoked sausage, cut into 1-inch pieces
  • 4 - 5 medium potatoes (peeling optional), cut into 1 1/2-inch cubes
  • 1 medium onion, halved and then cut into 1/2” slices
  • 1 tablespoon minced garlic

Once cooked, if there are not enough juices add another cup of chicken broth to make to more of a soup.
  • Mix the cayenne pepper, garlic salt, and black pepper together in a small bowl and set aside.
