What can I say I had leftover mashed potatoes and fresh broccoli. I can honestly say it was the best Broccoli cheese soup I ever made and I have concocted many.

Ingredients

  • 1 small head broccoli
  • 1 3/4 cups cold mashed potatoes
  • 1 can 15 1/2 oz chicken broth with garlic
  • 3/4 to 1 cups mild cheddar cheese shredded

How To Make easiest ever broccoli, cheesy potato soup

  • Step 1
    Dice the uncooked broccoli flowers only. Add to chicken stock in sauce pan. heat to boiling. Add potatoes and cheddar cheese and stir on loow for 10 minutes. Serve when it thickens.
