    chicken broth
  • 1
    whole rotisserie chicken
  • 2 c
  • 1 stalk(s)
  • 8 oz
    cream cheese
  • 1/2
    onion chopped
  • 1 tsp
    mined garlic
  • ·
    garlic salt, salt and pepper to taste
  • 1 bag(s)
    baby spinach

How to Make Chicken Florentine Soup


  1. De-bone the rotisserie chicken. Throw the bones and skin in a large pot with the broth and water. Bring to a boil and then reduce heat to simmer for an hour.
  2. Shred the chicken meat and set aside.
  3. Chop the celery and onion add them to a frying pan with the butter and garlic. Sauté the garlic, onion and celery until celery is translucent. Add the spinach a little at a time and sauté until all is fully wilted. Add the cream cheese and cook until cream cheese is fully melted.
  4. Strain the bones/skin out of the broth. Add the shredded chicken and the contents of the frying pan to the broth and simmer for 3 hrs. Add salt, pepper and garlic salt to taste.
