Ingredients
- 32 ounces chicken broth
- 1 - whole rotisserie chicken
- 2 cups water
- 1 stalk celery
- 8 ounces cream cheese
- 1/2 - onion chopped
- 1 teaspoon mined garlic
- - garlic salt, salt and pepper to taste
- 1 bag baby spinach
How To Make chicken florentine soup

Step 1De-bone the rotisserie chicken. Throw the bones and skin in a large pot with the broth and water. Bring to a boil and then reduce heat to simmer for an hour.

Step 2Shred the chicken meat and set aside.

Step 3Chop the celery and onion add them to a frying pan with the butter and garlic. Sauté the garlic, onion and celery until celery is translucent. Add the spinach a little at a time and sauté until all is fully wilted. Add the cream cheese and cook until cream cheese is fully melted.

Step 4Strain the bones/skin out of the broth. Add the shredded chicken and the contents of the frying pan to the broth and simmer for 3 hrs. Add salt, pepper and garlic salt to taste.
