This is my guessipe on that tuscan zuppa soup everyone is raving about. Its a one pot method also!! I played around with making it more keto friendly and came up with this recipe by deleting potatoes and adding cauliflower instead. I decided to also nix the bacon and just add some bacon grease to saute the onions with instead. Its difficult to find containers of broth that dont add sugar so you have to be careful and read the ingredients. We raise our own organic pigs so our sausage has little fat. All my ingredients are organic, btw. We love garlic so usually add a LOT of it! And basil too!!

Ingredients

  • 1
    cauliflower head
  • 2 lb
    italian sausage
  • 4 bag(s)
    fresh basil (in small 3/4 oz containers you get at stores
  • 1
    bulb of garlic( minced- add as much as your taste but not less than 4-5 cloves)
  • 2 box
    chicken broth (32 oz ea)
  • 1 bunch
    fresh kale, chopped
  • 2-3
    yellow onions, chopped
  • 2 Tbsp
    bacon grease
  • 2 pt
    heavy cream
  • ·
    salt to taste
  • ·
    pepper to taste

How to Make 1 pot Tuscany soup a’la me Keto style

Step-by-Step

  1. In 10 qt pot saute chopped onions, one container of basil, half of minced garlic in bacon grease till onions are clear. Add about a tsp salt and pepper
  2. Add in italian sausage and break apart while cooking so its in smaller pieces. Saute till cooked through.
  3. When sausage is done add in chopped cauliflower, 2 containers of basil and broth. Add just enough water to cover cauliflower. Bring to a boil, then simmer till cauliflower is soft. About 1/2 hr or so.
  4. Add chopped kale, remaining basil and garlic and 2 pts of heavy cream. Simmer till kale is cooked and soft, about 1/2hr or so. Salt and pepper to taste and youre ready to eat it up!!
