Ingredients

  • 2 large
    sweet potatoes, peeled and diced
  • 1
    onion, diced
  • 1
    14.5 oz can diced tomatoes, drained
  • 1
    8 oz can tomato sauce, low-sodium
  • 1
    15 oz can red kidney beans, drained
  • 2 tsp
    minced garlic
  • 1 Tbsp
    chili powder
  • 1 tsp
    paprika
  • 1 tsp
    chipotle pepper in adobo sauce, chopped
  • 1
    red bell pepper, diced
  • 1/2 tsp
    salt
  • 1/2 c
    orange juice
  • 1 c
    water, or vegetable broth-low-sodium

How to Make Sweet potato chili

Step-by-Step

  1. In a 6-quart slow cooker, place potatoes and onion. Add red bell pepper, tomatoes, tomato sauce, beans, garlic, chipotle pepper, paprika, and salt.
  2. Pour on orange juice and water, mix it up a bit w/ a lg spoon. Cover, cook on low 6-1/2 hrs, or until potatoes are tender.
