- 2 large sweet potatoes, peeled and diced
- 1 - onion, diced
- 1 - 14.5 oz can diced tomatoes, drained
- 1 - 8 oz can tomato sauce, low-sodium
- 1 - 15 oz can red kidney beans, drained
- 2 teaspoons minced garlic
- 1 tablespoon chili powder
- 1 teaspoon paprika
- 1 teaspoon chipotle pepper in adobo sauce, chopped
- 1 - red bell pepper, diced
- 1/2 teaspoon salt
- 1/2 cup orange juice
- 1 cup water, or vegetable broth-low-sodium
How To Make sweet potato chili

Step 1In a 6-quart slow cooker, place potatoes and onion. Add red bell pepper, tomatoes, tomato sauce, beans, garlic, chipotle pepper, paprika, and salt.

Step 2Pour on orange juice and water, mix it up a bit w/ a lg spoon. Cover, cook on low 6-1/2 hrs, or until potatoes are tender.
