light and flavourful chicken mushroom soup
I created this recipe on Dec. 24. After the Christmas feasting and celebrating it was time for a light, tasty, soothing, and nutritious meal. The chicken is chopped to approximately 1/2 inch dice to cook quickly. This recipe is suitable for a very small family, but could be easily doubled.

Ingredients
- 1 cup diced onion
- 1 large carrot, diced
- 1 stalk celery, diced
- 1 cup mushroom, diced
- 2 - boneless chicken thighs, diced
- 4 cups mushroom broth
- 1 teaspoon thyme, dried
- 1 tablespoon salt
- 1/2 teaspoon pepper
How To Make light and flavourful chicken mushroom soup

Step 1Sweat the onions and celery in a saucepan for a couple of minutes.

Step 2Add the rest of the ingredients and bring to a boil.

Step 3Simmer for 30 minutes or until vegetables are tender and chicken is cooked through. Correct the seasonings.

Step 4Serve with cheese biscuits or buttered toast.
