I have Meniere's, so I need to maintain a Low-sodium lifestyle to retain my hearing. Beware of reduced sodium labeling as it's not truly low-sodium! If you want more salt flavor, you can always add it.

thawed skinless, boneless chicken breasts, diced
2 qt
low-sodium chicken broth (pacific foods brand is great)
1 c
orzo pasta, uncooked
4 large
eggs lightly beaten
2 Tbsp
lemon juice (more or less to taste)
1-2 lb
fresh baby spinach
seasonings to taste - i used paprika, onion and garlic powder, and trader joe's 21 seasoning salute

How to Make Lemony Chicken, Orzo, and Spinach Soup

Step-by-Step

  • 1In a stock pot, bring broth to boil on high. Add lemon juice and seasonings. Add diced chicken breasts. Add orzo and cook until tender - approx. 7-10 mins. Reduce temp. to medium-high (6.5-7)
  • 2While stirring constantly, slowly pour in beaten eggs until they cook into threads. Add spinach. Stir occasionally until spinach is fully wilted. Taste for seasoning, and adjust as needed.
  • 3Serve hot with crusty garlic bread.
