Lemony Chicken, Orzo, and Spinach Soup
2thawed skinless, boneless chicken breasts, diced
2 qtlow-sodium chicken broth (pacific foods brand is great)
1 corzo pasta, uncooked
4 largeeggs lightly beaten
2 Tbsplemon juice (more or less to taste)
1-2 lbfresh baby spinach
·seasonings to taste - i used paprika, onion and garlic powder, and trader joe's 21 seasoning salute
How to Make Lemony Chicken, Orzo, and Spinach Soup
- In a stock pot, bring broth to boil on high. Add lemon juice and seasonings. Add diced chicken breasts. Add orzo and cook until tender - approx. 7-10 mins. Reduce temp. to medium-high (6.5-7)
- While stirring constantly, slowly pour in beaten eggs until they cook into threads. Add spinach. Stir occasionally until spinach is fully wilted. Taste for seasoning, and adjust as needed.
- Serve hot with crusty garlic bread.
