I have Meniere's, so I need to maintain a Low-sodium lifestyle to retain my hearing. Beware of reduced sodium labeling as it's not truly low-sodium! If you want more salt flavor, you can always add it.

Ingredients
- 2 - thawed skinless, boneless chicken breasts, diced
- 2 quarts low-sodium chicken broth (pacific foods brand is great)
- 1 cup orzo pasta, uncooked
- 4 large eggs lightly beaten
- 2 tablespoons lemon juice (more or less to taste)
- 1-2 pound fresh baby spinach
- - seasonings to taste - i used paprika, onion and garlic powder, and trader joe's 21 seasoning salute

Step 1In a stock pot, bring broth to boil on high. Add lemon juice and seasonings. Add diced chicken breasts. Add orzo and cook until tender - approx. 7-10 mins. Reduce temp. to medium-high (6.5-7)

Step 2While stirring constantly, slowly pour in beaten eggs until they cook into threads. Add spinach. Stir occasionally until spinach is fully wilted. Taste for seasoning, and adjust as needed.

Step 3Serve hot with crusty garlic bread.
