lemony chicken, orzo, and spinach soup

I have Meniere's, so I need to maintain a Low-sodium lifestyle to retain my hearing. Beware of reduced sodium labeling as it's not truly low-sodium! If you want more salt flavor, you can always add it.

Ingredients

  • 2 - thawed skinless, boneless chicken breasts, diced
  • 2 quarts low-sodium chicken broth (pacific foods brand is great)
  • 1 cup orzo pasta, uncooked
  • 4 large eggs lightly beaten
  • 2 tablespoons lemon juice (more or less to taste)
  • 1-2 pound fresh baby spinach
  • - seasonings to taste - i used paprika, onion and garlic powder, and trader joe's 21 seasoning salute

How To Make lemony chicken, orzo, and spinach soup

  • Step 1
    In a stock pot, bring broth to boil on high. Add lemon juice and seasonings. Add diced chicken breasts. Add orzo and cook until tender - approx. 7-10 mins. Reduce temp. to medium-high (6.5-7)
  • Step 2
    While stirring constantly, slowly pour in beaten eggs until they cook into threads. Add spinach. Stir occasionally until spinach is fully wilted. Taste for seasoning, and adjust as needed.
  • Step 3
    Serve hot with crusty garlic bread.
