garnish essentials: awesome soup/stew topper
It is fun what you can do with herbs and spices. In this case, I fried them in a bit of olive oil, and used them to top a bowl of soup… Awesome stuff. I am planning to experiment with other herb/spice combinations, but this combination really gave my chicken soup an awesome flavor boost. So, you ready… Let’s get into the kitchen.

Ingredients
- PLAN/PURCHASE
- 3 tablespoons olive oil, extra virgin
- 3 - 4 fresh dill fronds
- 1 tablespoon fennel seeds
- 1 - 2 tablespoons sour cream, or plain yogurt
- 1 - 2 pinches red-pepper flakes

Step 1PREP/PREPARE

Step 2Gather your ingredients (mise en place).

Step 3The amounts pictured will garnish two bowls of soup.

Step 4Heat up the oil in a skillet over medium heat, then add the fennel seeds, and stir for about 50 – 60 seconds. At this point, add the dill fronds, and red-pepper flakes.

Step 5When the dill begins to crisp and turn dark (about 60 seconds), remove the contents of the skillet with a slotted spoon and drain on a paper towel. Then plop a dollop of sour cream or yogurt in the middle of a hot cozy bowl of soup or stew, garnish with the topper, and tuck in.

Step 6PLATE/PRESENT

Step 7Serve with soups, soups, whatever you choose. Enjoy.
