cabbage potato soup

This soup is yum yummy! It is not real heavy, but of course I put fried onions and grated cheese on top to add those extra calories. You can add some Ham to this soup, I have done that before and it turned out real good. So if you have some leftover ham from the holidays this might be something you can put it in.

Ingredients

  • 1 large onion, chopped
  • 2 tablespoons butter
  • 10 cups water
  • 6 cups cabbage, chopped
  • 4 cups potatoes, peeled & diced
  • 2 1/2 tablespoons chicken bouillon granules
  • 1/2 teaspoon coarsely ground pepper
  • 1/2 teaspoon garlic, minced
  • 4 cups ham, fully cooked, cubed (optional)

How To Make cabbage potato soup

  • Step 1
    In a large saucepan or Dutch oven, saute onion in butter until tender.
  • Step 2
    Add the water, cabbage, potatoes, bouillon, pepper and garlic.
  • Step 3
    Cover and simmer for 20-25 minutes or until potatoes are tender.
  • Step 4
    Stir in ham; heat through. (optional)
  • Step 5
    Serve with cornbread and enjoy!
