No one in my house ever complains when I say, "I'm making vegetable beef soup tonight." We love this soup with a slice of fresh potato bread. This soup is hearty and ever so comforting especially on those cold winter nights.

beef stew meat or steak cut into small cubes
medium onion, finely chopped
1 c
cabbage, finely chopped
8 c
1 c
celery, cut into small pieces
1 1/2 c
carrots, cut into small pieces
2 c
potatoes, cut into small pieces
1/2 c
elbow or shell pasta
28 oz can of diced or stewed tomatoes (your preference)
salt and pepper to taste

How to Make Vegetable Beef Soup


  • 1Combine beef, onions, cabbage and water in large pot. Cook for 1 hour. Add celery, carrots, and potatoes and cook for 45 minutes. Add pasta and cook until tender (about 8 minutes). Add tomatoes. Salt and pepper to taste.
