No one in my house ever complains when I say, "I'm making vegetable beef soup tonight." We love this soup with a slice of fresh potato bread. This soup is hearty and ever so comforting especially on those cold winter nights.

Ingredients

  • 1 1/2 pounds beef stew meat or steak cut into small cubes
  • 1 - medium onion, finely chopped
  • 1 cup cabbage, finely chopped
  • 8 cups water
  • 1 cup celery, cut into small pieces
  • 1 1/2 cups carrots, cut into small pieces
  • 2 cups potatoes, cut into small pieces
  • 1/2 cup elbow or shell pasta
  • 1 - 28 oz can of diced or stewed tomatoes (your preference)
  • - salt and pepper to taste

How To Make vegetable beef soup

  • Step 1
    Combine beef, onions, cabbage and water in large pot. Cook for 1 hour. Add celery, carrots, and potatoes and cook for 45 minutes. Add pasta and cook until tender (about 8 minutes). Add tomatoes. Salt and pepper to taste.
