hearty soup

I made this soup the other night in my Ninja Cooking System set on "slow cooker" and it was so delicious that I decided that I would write down what I added to the dry soup mix that I had purchased. The 6 ingredients at the end is the dry list. I purchased it at a local farm market and added the rest of the goodies. This is one that I know I will be making again & again. I was so pleased with how thick, flavorful and colorful this soup turned out to be. I hope you'll try it too. It most certainly feeds an army.

Ingredients

  • 12-14 cups water
  • 2 cups carrots, chopped
  • 3 medium celery stalks, chopped
  • 2 cups green beans
  • 2 cups cabbage, shredded
  • 1 quart tomatoes, canned italian-style and diced 28 oz.
  • 1 1/2 pounds turkey or beef, ground
  • 2 tablespoons greek seasoning
  • 2 tablespoons celery flakes, dried optional
  • 1 - 2 tablespoons garlic, minced
  • - salt & pepper to taste
  • HEARTY SOUP MIX
  • 1/4 cup split green peas
  • 1/4 cup split yellow peas
  • 1/4 cup brown rice
  • 1/4 cup pearl barley, uncooked
  • 1/4 cup lentils, dry
  • 1/4 cup alphabet noodles, uncooked

How To Make hearty soup

  • Step 1
    Add 8 cups of water into a crock-pot, 1 1/2 cups of Hearty mix, 2 tsp of salt and simmer 1 hour.
  • Step 2
    Add 2 cups diced carrots, 3 stalks chopped celery, 2 cups of green beans & 2 cups of shredded cabbage. Simmer an additional 40 minutes. Add another 4 cups of water.
  • Step 3
    In your Ninja or crock-pot add your meat one tbsp of oil oil to cook up ground turkey. Drain meat if necessary. Then add your green beans and carrots.
  • Step 4
    Now add all the rest of your fresh vegetables and dried ingredients along with spices.
  • Step 5
    Set Ninja on high for about 45 minutes. Stir soup mixture about every 20 minutes to check consistency of soup. Add more water if needed, which I had to do because of the absorption of the dry ingredients. I then lowered my temp to a medium and cooked for about an hour longer.
  • Step 6
    January 17th,2015 --- Made this for dinner tonight and served sliced up (smaller portion) Italian Subs with it.
