Tastes just like halupki (cabbage rolls in polish) It's so good. My friend Chelly Bundy, who is a fanatastic cook, shared this with me. She is polish, and makes the best polish food around. She really knows her stuff! Chelly uses 2 tbsp of oil in the rice, and 2 tbsp to brown the meat; feel free to do the same.

She sometimes serves this with mashed potatoes.

Ingredients

olive oil, extra virgin
1 c
brown rice, raw
1 qt
+ 2 cups beef stock, low fat
1 1/2 lb
ground beef, or turkey

onion, diced
1-2
carrots, sliced into rounds
2-4 clove
garlic. minced
1/2 -1
head of cabbage, thinly sliced
28 oz
diced tomatoes
15 oz
tomato sauce
1/2 c
ketchup
1
bay leaf
salt and pepper
garlic powder

How to Make Easy Cabbage Roll Soup

Step-by-Step

  • 1Heat a saucepan over med-high and add olive oil. Add rice and stir to coat with oil. Pour 2 cups of beef stock over the rice, bring to boil, cover and cook for 20 min.
  • 2Heat a large, deep pot over med-high, spray with cooking spray, add the beef and cook unitl browned, drain. Season with salt, pepper and garlic powder.
  • 3Add onions, garlic and bayleaf to meat. Cook until the onoin and carrots begin to soften, then add cabbage.
  • 4Add the tomatoes, tomato sauce and remaining beef stock, cover the pot. Raise the heat to high until it starts to boil, then turn down to a simmer.
  • 5Once the rice is cooked, add to the soup and continue to simmer. Adjust the salt and pepper to taste, remove bay leaf and serve. This will be very thick; like a "stoup".
