This Chili has a southwestern flare! Hubby and son had 2nds! Son and hubby added hot sauce. Topped with shredded cheese is a must, as well as steaming cornbread!

Ingredients

  • 2 pounds chicken breast-cooked and diced
  • 1 medium yellow onion- diced
  • 1 can black beans, canned
  • 1 can corn-drained
  • 1 can kidney beans, canned
  • 1 can tomatoes, canned italian-style and diced
  • 1 can tomato sauce
  • 2-3 tablespoons chili powder
  • 1 tablespoon cumin powder
  • 2-3 cans water
  • 2 teaspoons yellow cornmeal

How To Make southwest chicken chili

  • Step 1
    On med/High heat, add oil to a dutch oven, brown chicken pieces until no longer pink. Add in chopped onion and chili powder and cumin. Stir to combined
  • Step 2
    Lower heat. Add all canned items. Add water. Bring up heat to Boil. Continue to stir. Reduce to a simmer.; occasionally stirring for 30 minutes.
  • Step 3
    As it simmers, sprinkle in Cornmeal until desired thickness. Serve up chili. May add shredded cheese if desired. Goes good with cornbread.
