This Chili has a southwestern flare! Hubby and son had 2nds! Son and hubby added hot sauce. Topped with shredded cheese is a must, as well as steaming cornbread!

Ingredients
- 2 pounds chicken breast-cooked and diced
- 1 medium yellow onion- diced
- 1 can black beans, canned
- 1 can corn-drained
- 1 can kidney beans, canned
- 1 can tomatoes, canned italian-style and diced
- 1 can tomato sauce
- 2-3 tablespoons chili powder
- 1 tablespoon cumin powder
- 2-3 cans water
- 2 teaspoons yellow cornmeal
How To Make southwest chicken chili

Step 1On med/High heat, add oil to a dutch oven, brown chicken pieces until no longer pink. Add in chopped onion and chili powder and cumin. Stir to combined

Step 2Lower heat. Add all canned items. Add water. Bring up heat to Boil. Continue to stir. Reduce to a simmer.; occasionally stirring for 30 minutes.

Step 3As it simmers, sprinkle in Cornmeal until desired thickness. Serve up chili. May add shredded cheese if desired. Goes good with cornbread.
