"refried" "beans"
We had a taco night and I wanted to make refried beans, but realized I only had lentils. So I improvised, and they turned out delicious! In fact, I liked these way better then regular refried beans, and so did my family. My 5 year old even had seconds!

Ingredients
- 1 1/2 cups dried lentils
- 3 cups water or chicken broth
- 1 - bay leaf
- 2 tablespoons freeze dried red onions
- 1/2 tablespoon minced garlic
- 1/2 tablespoon salt
- 1 teaspoon pepper
- 1/2 tablespoon cumin
How To Make "refried" "beans"

Step 1Into a saucepan, pour in water or chicken broth, and stir in all ingredients but lentils.

Step 2Bring mixture to boil, then add lentils. Lower temp to medium high.

Step 3Stirring occasionally, let lentils boil for about 30 minutes or until tender. (If needed, add more liquid while cooking, but you don't want them very wet in the end).

Step 4Once tender, spoon lentils into food processor and pulse until smooth. Serve.

Step 5**If you don't want to use these as pho-refried beans, add more chicken broth, cooked diced carrots and celery, and top with bacon pieces or pancetta for a delicious soup!
