"refried" "beans"

We had a taco night and I wanted to make refried beans, but realized I only had lentils. So I improvised, and they turned out delicious! In fact, I liked these way better then regular refried beans, and so did my family. My 5 year old even had seconds!

Ingredients

  • 1 1/2 cups dried lentils
  • 3 cups water or chicken broth
  • 1 - bay leaf
  • 2 tablespoons freeze dried red onions
  • 1/2 tablespoon minced garlic
  • 1/2 tablespoon salt
  • 1 teaspoon pepper
  • 1/2 tablespoon cumin

How To Make "refried" "beans"

  • Step 1
    Into a saucepan, pour in water or chicken broth, and stir in all ingredients but lentils.
  • Step 2
    Bring mixture to boil, then add lentils. Lower temp to medium high.
  • Step 3
    Stirring occasionally, let lentils boil for about 30 minutes or until tender. (If needed, add more liquid while cooking, but you don't want them very wet in the end).
  • Step 4
    Once tender, spoon lentils into food processor and pulse until smooth. Serve.
  • Step 5
    **If you don't want to use these as pho-refried beans, add more chicken broth, cooked diced carrots and celery, and top with bacon pieces or pancetta for a delicious soup!
