This quick and easy to make soup tastes great but it is so much better after it has had a day or two to sit, covered in the fridge. This allows all the great flavors to mingle and mesh. Please Note: When using dried white beans, wash first and soak overnight to soften; then rinse. Now they are ready to use.

Ingredients

  • 2 cups white beans (cannelli)
  • 1 large onion, chopped
  • 1/2 cup olive oil
  • 2 tablespoons tomato sauce
  • 1 - 2 teaspoons salt, add gradually to taste
  • 1/4 teaspoon black pepper
  • 1/2 tablespoon sweet paprika
  • 1/2 teaspoon chili powder
  • 1 tablespoon chopped parsley
  • 1 tablespoon chopped mint
  • 3 cups water (add more if necessary)

How To Make not the same old bean soup

  • Step 1
    Place beans in a pot of boiling water and boil uncovered for 5 minutes. Rinse and then bring 3 cups of hot water to a boil, and boil the beans in a covered pot for another 15 minutes.
  • Step 2
    In a frying pan, saute the onions in olive oil until they turn yellow. To the pan add 2 tablespoons of the warm bean stock, tomato sauce, parsley, salt, pepper, paprika, chili powder and parsley. Mix and cook for 10 minutes, until a thick sauce forms, now pour everything into the pot with the beans.
  • Step 3
    Next, add the chopped mint, cover and simmer for 2 - 2 1/2 hours. Allow to cool and place in fridge, when ready to serve, reheat gently and enjoy.
