comforting lentil soup
We love lentils at our house and eat them regularly. They are nutritious, and this dish is comfort food any time of year. I usually add Italian seasoning. However, for lunch today, I decided to mix it up, and I created a new and delicious lentil soup that my husband and I loved. The combination of ingredients I used meshed perfectly together and upped the flavors. I will be making this many times over.

This lentil soup is surprisingly delicious. The lentils are tender once cooked. The soup has a subtle sweetness with a hint of cinnamon that enhances other flavors. Ingredients
- 1 package lentils, dry (16 oz)
- 6 cups water, or beef or vegetable broth
- 1/3 cup chopped onion
- 1/3 cup chopped carrots
- 1/3 cup chopped celery
- 1 teaspoon garlic powder
- 1/2 teaspoon salt, or to taste
- 1 teaspoon cinnamon
- 1/2 teaspoon black pepper, or to taste
- 3 tablespoons brown sugar
- 1/3 cup ketchup
- 3 slices bacon, roughly chopped (optional)

If you want a thinner soup, add more broth or water. We fried the bacon and then added the veggies to cook them for a few minutes before adding the remaining ingredients.

Step 1Prepare ingredients.

Step 2In a soup pot, cook bacon until done.

Step 3Add onions, celery, and carrots. Cook along with the bacon for 3-4 minutes.

Step 5Bring to a boil. Turn the temperature to medium and cook for 1 hour adding more liquid as needed. Remove pan from heat and serve.
