We love lentils at our house and eat them regularly. They are nutritious, and this dish is comfort food any time of year. I usually add Italian seasoning. However, for lunch today, I decided to mix it up, and I created a new and delicious lentil soup that my husband and I loved. The combination of ingredients I used meshed perfectly together and upped the flavors. I will be making this many times over.

This lentil soup is surprisingly delicious. The lentils are tender once cooked. The soup has a subtle sweetness with a hint of cinnamon that enhances other flavors.   • 1 pkg
    lentils, dry (16 oz)
  • 6 c
    water, or beef or vegetable broth
  • 1/3 c
    chopped onion
  • 1/3 c
    chopped carrots
  • 1/3 c
    chopped celery
  • 1 tsp
    garlic powder
  • 1/2 tsp
    salt, or to taste
  • 1 tsp
    cinnamon
  • 1/2 tsp
    black pepper, or to taste
  • 3 Tbsp
    brown sugar
  • 1/3 c
    ketchup
  • 3 slice
    bacon, roughly chopped (optional)

If you want a thinner soup, add more broth or water. We fried the bacon and then added the veggies to cook them for a few minutes before adding the remaining ingredients.

    In a soup pot, cook bacon until done.

    Bring to a boil. Turn the temperature to medium and cook for 1 hour adding more liquid as needed. Remove pan from heat and serve.
