This recipe comes really close to tasting just like Cracker Jacks. Only thing missing is the little toy surprise.

Ingredients

  • 1-2 gallon prepared popcorn with kernels removed
  • 2 cups brown sugar, firmly packed
  • 1 cup butter (cut up)
  • 1/2 cup corn syrup, light
  • 1/2 teaspoon baking soda
  • 1/2 teaspoon salt
  • 1 teaspoon vanilla
  • 1 cup peanuts (optional)

How To Make caramel popcorn

  • Step 1
    Popcorn is in a large (heat proof) bowl. Lightly grease two large cookie sheets, or one large turkey roaster.( I use the turkey roaster) Set aside. Heat oven 250 degrees.
  • Step 2
    In a medium sized saucepan add to it the butter, brown sugar and corn syrup. Stir well. Bring to a boil over medium low heat. Stop stirring and boil it slowly for 5 minutes.
  • Step 3
    Remove from heat and add the baking soda, salt, vanilla and the peanuts. Pour over the popcorn and being careful not to burn yourself toss it well.
  • Step 4
    Pour the popcorn mixture into the prepared pans or pan. Bake for 1 hour making sure to stir every 20 minutes. Cool and store in ziplock bags or covered tins.
