This recipe comes really close to tasting just like Cracker Jacks. Only thing missing is the little toy surprise.

Ingredients
- 1-2 gallon prepared popcorn with kernels removed
- 2 cups brown sugar, firmly packed
- 1 cup butter (cut up)
- 1/2 cup corn syrup, light
- 1/2 teaspoon baking soda
- 1/2 teaspoon salt
- 1 teaspoon vanilla
- 1 cup peanuts (optional)
How To Make caramel popcorn

Step 1Popcorn is in a large (heat proof) bowl. Lightly grease two large cookie sheets, or one large turkey roaster.( I use the turkey roaster) Set aside. Heat oven 250 degrees.

Step 2In a medium sized saucepan add to it the butter, brown sugar and corn syrup. Stir well. Bring to a boil over medium low heat. Stop stirring and boil it slowly for 5 minutes.

Step 3Remove from heat and add the baking soda, salt, vanilla and the peanuts. Pour over the popcorn and being careful not to burn yourself toss it well.

Step 4Pour the popcorn mixture into the prepared pans or pan. Bake for 1 hour making sure to stir every 20 minutes. Cool and store in ziplock bags or covered tins.
