How to Make Caramel popcorn
1Popcorn is in a large (heat proof) bowl. Lightly grease two large cookie sheets, or one large turkey roaster.( I use the turkey roaster) Set aside. Heat oven 250 degrees.
2In a medium sized saucepan add to it the butter, brown sugar and corn syrup. Stir well. Bring to a boil over medium low heat. Stop stirring and boil it slowly for 5 minutes.
3Remove from heat and add the baking soda, salt, vanilla and the peanuts. Pour over the popcorn and being careful not to burn yourself toss it well.
4Pour the popcorn mixture into the prepared pans or pan. Bake for 1 hour making sure to stir every 20 minutes. Cool and store in ziplock bags or covered tins.
