This recipe comes really close to tasting just like Cracker Jacks. Only thing missing is the little toy surprise.

Ingredients

1-2 gal
prepared popcorn with kernels removed
2 c
brown sugar, firmly packed
1 c
butter (cut up)
1/2 c
corn syrup, light
1/2 tsp
baking soda
1/2 tsp
salt
1 tsp
vanilla
1 c
peanuts (optional)

How to Make Caramel popcorn

Step-by-Step

  • 1Popcorn is in a large (heat proof) bowl. Lightly grease two large cookie sheets, or one large turkey roaster.( I use the turkey roaster) Set aside. Heat oven 250 degrees.
  • 2In a medium sized saucepan add to it the butter, brown sugar and corn syrup. Stir well. Bring to a boil over medium low heat. Stop stirring and boil it slowly for 5 minutes.
  • 3Remove from heat and add the baking soda, salt, vanilla and the peanuts. Pour over the popcorn and being careful not to burn yourself toss it well.
  • 4Pour the popcorn mixture into the prepared pans or pan. Bake for 1 hour making sure to stir every 20 minutes. Cool and store in ziplock bags or covered tins.
