My Dad absolutely loves Idaho Spuds candy. I wanted to surprise him with a homemade version. I tried and tried and finally I do believe I have nailed it. At least he tells me that I have. Every Christmas he looks forward to seeing these in his goodie box.

Ingredients For homemade idaho spuds candy

    eggs (beaten) if not wanting to use real eggs can substitute powdered eggs and water to equal 2 large eggs
  • 1 lb
    powdered sugar
  • 1 tsp
    vanilla
  • tiny pinch of salt
  • 1 c
    milk chocolate chips
  • 2 Tbsp
    butter
  • 10 oz
    mini marshmallows
  • 2 c
    finely shredded coconut or finely chopped nuts

How To Make homemade idaho spuds candy

    In a small microwave bowl, melt the milk chocolate chips and the butter together in the microwave for about 1 minute. Stir until fully melted. Set aside

    In a large mixing bowl mix well the beaten eggs, powdered sugar, vanilla and salt. Add the melted chocolate and butter mixture. Stir to combine. Then add the mini- marshmallows and combine well. May have to use your hands to really mix it all up. Don't be afraid to get your hands gooey.

    Scoop out a tablespoon of the mixture, shape as well as you can into a log. Then roll in the shredded coconut or nuts. Continue until all the chocolate mixture is used up.
