Ingredients
- 2 (20oz) cans cans chunk pineapple in juice (no sugar added), well drained
- 3/4 cup splenda
- 6 tablespoons self-rising flour
- 2 cups grated sharp cheddar cheese
- 2 cups crumbled ritz crackers (approximately 1 sleeve)
- 1/2 cup (1 stick) country crock spread or margarine, melted
How To Make southern potluck pineapple casserole

Step 1Mix together drained pineapple,splenda,flour, and cheese. Pour into an 8x8" baking dish lightly sprayed with non-stick cooking spray. Combine Ritz cracker crumbs and melted margarine,tossing with a fork to moisten all the crumbs. Top the pineapple mixture evenly with the cracker crumb mixture. Bake at 350 degrees for 25-30 minutes until heated through.
