low sugar candied popcorn

This popcorn has only 8.5 carbs per serving. A friend of mine‘s daughter has diabetes. She was looking for a popcorn recipe that was diabetic friendly. I stumbled upon this recipe. This is a really great recipe.

Ingredients

  • 13 cups fresh air popped popcorn
  • 1 - egg white
  • 2 tablespoons dark molasses
  • 2 teaspoons vanilla extract
  • 3/4 cup splenda (sugar substitute)
  • 1/2 cup dry roasted peanuts

How To Make low sugar candied popcorn

  • Step 1
    spray baking sheet with cooking spray
  • Step 2
    pop the popcorn
  • Step 3
    in a large bowl place popcorn.in a small bowl-add egg white molasses,and vanilla,salt,and granular splenda. Whisk ingredients well.
  • Step 4
    add peanuts and stir well.pour over popcorn,and toss until coated.
  • Step 5
    put in baking sheet,and bake at 325 for 20-25 minutes.turn it a bit while baking.
  • Step 6
    pour on to waxed paper or parchment paper and let cool.cool to room temp. before serving.
