sweet and salty snacks - regular or gluten-free
I'm always on the lookout for gluten-free dishes for my son. I ran across a similar recipe to this one online, and I was easily able to make it gluten-free by substituting pretzel crisps for the pretzel squares. And, because the crisps are not as salty as the squares, I added a pinch of sea salt. I also use Ritz crackers, so that my aunt with dental issues can enjoy her favorite Rolos in a new way! For the rest of the family, I found the square pretzel snaps were ideal!

- 36 - gluten-free pretzel crisps
- 36 - rolos - unwrapped
- 36 - m&m's

Step 1Preheat oven to 200°F.

Step 2Line large cookie sheet with parchment paper. This step isn't really necessary but it can save you from cleaning up later if the chocolate over-melts. (Don't despair, your first batch probably will!)

Step 3Place unbroken crisps (in whatever quantity you prefer) on the parchment paper or on your baking rack.

Step 4Place one unwrapped Rolo in the center of each crisp. Bake 90 seconds to 2 minutes, depending on your oven. It's better to pull the pan too early than too late, especially on your first try. You can always pop it back in for a few seconds, if necessary.

Step 5Remove pan from oven and transfer from paper to cooling rack (if available,) to reduce further melting. If using a baking rack, then you'll want to remove it from the hot baking sheet, ASAP.

Step 6If desired, sprinkle chocolates with a pinch of sea salt granules.

Step 7Place one candy piece (like an m&m or Red Hot) in the center of each Rolo. Handle carefully, the chocolate will be hot and will easily stick to you.

Step 8Allow to cool to prevent burns from hot caramel and chocolate before eating.

Step 9Store leftovers in covered, air-tight container.

Step 10NOTES: If your eaters are not gluten-sensitive, you can replace the pretzel crisps with actual pretzel squares. Also, the larger the candy placed on top, the more likely the Rolo will sag due to the weight.
