I'm always on the lookout for gluten-free dishes for my son. I ran across a similar recipe to this one online, and I was easily able to make it gluten-free by substituting pretzel crisps for the pretzel squares. And, because the crisps are not as salty as the squares, I added a pinch of sea salt. I also use Ritz crackers, so that my aunt with dental issues can enjoy her favorite Rolos in a new way! For the rest of the family, I found the square pretzel snaps were ideal!

  • Preheat oven to 200°F.
    Step 1
    Preheat oven to 200°F.
  • I highly recommend lining your cookie sheet with parchment paper, whether you use a baking rack or not. Despite your best efforts, there are bound to be drips of melted chocolate.
    Step 2
    Line large cookie sheet with parchment paper. This step isn't really necessary but it can save you from cleaning up later if the chocolate over-melts. (Don't despair, your first batch probably will!)
  • I found that a baking rack over parchment paper on a cookie sheet was the easiest way and make for less cleanup.
    Step 3
    Place unbroken crisps (in whatever quantity you prefer) on the parchment paper or on your baking rack.
  • Place one unwrapped Rolo on the center of each crisp, pretzel or cracker.
    Step 4
    Place one unwrapped Rolo in the center of each crisp. Bake 90 seconds to 2 minutes, depending on your oven. It's better to pull the pan too early than too late, especially on your first try. You can always pop it back in for a few seconds, if necessary.
  • Remove baking sheet from oven at the first sign of glistening (or even before if you overheated the first batch!)
    Step 5
    Remove pan from oven and transfer from paper to cooling rack (if available,) to reduce further melting. If using a baking rack, then you'll want to remove it from the hot baking sheet, ASAP.
  • Step 6
    If desired, sprinkle chocolates with a pinch of sea salt granules.
  • Remove your items from heat, ASAP, to discourage additional melting. If desired, sprinkle a little sea salt across chocolates. Now, you get to add your candies white the chocolate is still warm.
    Step 7
    Place one candy piece (like an m&m or Red Hot) in the center of each Rolo. Handle carefully, the chocolate will be hot and will easily stick to you.
  • Cooling takes longer than you might expect, especially if your kitchen is warm. I had so many batches to make, I cheated a little by placing my treats under a fan to speed up cooling.
    Step 8
    Allow to cool to prevent burns from hot caramel and chocolate before eating.
  • After completely cooling, I placed my treats in foil-lined holiday food gift boxes.
    Step 9
    Store leftovers in covered, air-tight container.
  • These make wonderful holiday gifts/treats!

    NOTES: If your eaters are not gluten-sensitive, you can replace the pretzel crisps with actual pretzel squares. Also, the larger the candy placed on top, the more likely the Rolo will sag due to the weight.
