I love to make these with the juice that's left over after having a beet salad. The color is fun, and I've even had friends that don't like beets love these.

Ingredients

  • 12 - eggs, hard boiled and peeled
  • 2 cans beet juice from 2 15oz.
  • 1 tablespoon garlic powder
  • 1 tablespoon onion powder
  • 1/2 teaspoon pepper
  • 1 teaspoon salt
  • 1/4 cup olive oil, extra virgin
  • 3/4 cup apple cider vinegar

How To Make pickled eggs

  • Step 1
    Hard boil and peel 1 dozen eggs
  • Step 2
    mix together remaining ingredients in a non reactive jar or bowl
  • Step 3
    add eggs making sure they are covered with the liquid.
  • Step 4
    soak eggs at least over night, the ones pictured were in for around a week.
