Ingredients
- 3 cups cauliflower cut into pieces
- 1/2 jar pimento
- 2 tablespoons chopped green peppers
- 1 can sliced water chestnuts
- 2 - hard cooked eggs ( optional )
- 1 small onion chopped
- 1 cup shredded chedder cheese
- SAUCE:
- 4 tablespoons butter, melted
- 3 tablespoons flour
- 1/2 teaspoon salt
- 1/4 teaspoon pepper
- 2 cups milk
- 1 cup american cheese cubed
- - cook as for white sauce add cheese and stir well
- TOPPING:
- 1 to 2 cups cheese crackers, crushed
- 3 tablespoons parmesan cheese
How To Make couliflower cheesy casserole

Step 1Cook cauliflower, green peppers, and onion together until almost tender drain.

Step 2Add water chestnuts, eggs chopped, cheese and pimentos. Pour into greased baking dish ( 2 1/2 qt. size.)

Step 3Cover with sauce and gently mix. Sprinkle topping over all. Bake at 350 degrees for 30 to 45 minutes.

Step 4NOTE: Broccoli may be used, or half cauliflower and half broccoli.
