Ingredients

  • 3 c
    cauliflower cut into pieces
  • 1/2 jar(s)
    pimento
  • 2 Tbsp
    chopped green peppers
  • 1 can(s)
    sliced water chestnuts
  • 2
    hard cooked eggs ( optional )
  • 1 small
    onion chopped
  • 1 c
    shredded chedder cheese
  • SAUCE:

  • 4 Tbsp
    butter, melted
  • 3 Tbsp
    flour
  • 1/2 tsp
    salt
  • 1/4 tsp
    pepper
  • 2 c
    milk
  • 1 c
    american cheese cubed
  • ·
    cook as for white sauce add cheese and stir well
  • TOPPING:

  • 1 to 2 c
    cheese crackers, crushed
  • 3 Tbsp
    parmesan cheese

How to Make COULIFLOWER CHEESY CASSEROLE

Step-by-Step

  1. Cook cauliflower, green peppers, and onion together until almost tender drain.
  2. Add water chestnuts, eggs chopped, cheese and pimentos. Pour into greased baking dish ( 2 1/2 qt. size.)
  3. Cover with sauce and gently mix. Sprinkle topping over all. Bake at 350 degrees for 30 to 45 minutes.
  4. NOTE: Broccoli may be used, or half cauliflower and half broccoli.
