couliflower cheesy casserole

This is a wonderful addition to just about any meal. Way to go GREAT GRANDMOTHER!!

Ingredients

  • 3 cups cauliflower cut into pieces
  • 1/2 jar pimento
  • 2 tablespoons chopped green peppers
  • 1 can sliced water chestnuts
  • 2 - hard cooked eggs ( optional )
  • 1 small onion chopped
  • 1 cup shredded chedder cheese
  • SAUCE:
  • 4 tablespoons butter, melted
  • 3 tablespoons flour
  • 1/2 teaspoon salt
  • 1/4 teaspoon pepper
  • 2 cups milk
  • 1 cup american cheese cubed
  • - cook as for white sauce add cheese and stir well
  • TOPPING:
  • 1 to 2 cups cheese crackers, crushed
  • 3 tablespoons parmesan cheese

How To Make couliflower cheesy casserole

  • Step 1
    Cook cauliflower, green peppers, and onion together until almost tender drain.
  • Step 2
    Add water chestnuts, eggs chopped, cheese and pimentos. Pour into greased baking dish ( 2 1/2 qt. size.)
  • Step 3
    Cover with sauce and gently mix. Sprinkle topping over all. Bake at 350 degrees for 30 to 45 minutes.
  • Step 4
    NOTE: Broccoli may be used, or half cauliflower and half broccoli.
