I love these. Even though the recipe doesn't call for it, I add a little garlic powder to my mixture for extra flavor.

Ingredients

  • 3-1/2 cups shredded/grated zucchini (about one pound)
  • 2 tablespoons grated onion
  • 2 tablespoons chopped parsley (or 1 tablespoon dried parsley)
  • 1/3 cup grated or shredded parmesan cheese
  • 1 cup soft fresh bread crumbs
  • 1/2 teaspoon salt
  • 1/4 teaspoon pepper
  • 2 - eggs
  • - fine dry bread crumbs

How To Make zucchini patties

  • Step 1
    Heat oven to 350 degrees. Spray a cookie sheet with cooking spray.
  • Step 2
    After grating the zucchini, squeeze out as much liquid as possible with your hands.
  • Step 3
    Combine the zucchini, onion, parsley, Parmesan cheese, and 1 cup of soft bread crumbs with the salt, pepper and eggs.
  • Step 4
    Shape into patties and coat with dry bread crumbs.
  • Step 5
    Place on the cookie sheet, then lightly spray the patties with cooking spray. Bake for 30-40 minutes, or until golden brown.
