I love these. Even though the recipe doesn't call for it, I add a little garlic powder to my mixture for extra flavor.

Ingredients
- 3-1/2 cups shredded/grated zucchini (about one pound)
- 2 tablespoons grated onion
- 2 tablespoons chopped parsley (or 1 tablespoon dried parsley)
- 1/3 cup grated or shredded parmesan cheese
- 1 cup soft fresh bread crumbs
- 1/2 teaspoon salt
- 1/4 teaspoon pepper
- 2 - eggs
- - fine dry bread crumbs
How To Make zucchini patties

Step 1Heat oven to 350 degrees. Spray a cookie sheet with cooking spray.

Step 2After grating the zucchini, squeeze out as much liquid as possible with your hands.

Step 3Combine the zucchini, onion, parsley, Parmesan cheese, and 1 cup of soft bread crumbs with the salt, pepper and eggs.

Step 4Shape into patties and coat with dry bread crumbs.

Step 5Place on the cookie sheet, then lightly spray the patties with cooking spray. Bake for 30-40 minutes, or until golden brown.
