zucchini fritters

I was challenged to come up with a way to use the abundance of zucchini that everyone has this time of year. Then we had a pot luck after class one night. One of my classmates is gluten and dairy free. I searched for recipes that I liked and thought I found one only to not be able to open it when I was ready to cook. I did another quick search and found a couple of other recipes but they did not have the same ingredients or cooking time and did not always meet my dairy and gluten requirements. SOOO, as I usually do, I combined what I remembered and a couple of ideas and the Zucchini Fritter

Ingredients

  • 4 small zucchini
  • 1 large carrot
  • 1 pinch fresh chives
  • 1 pinch fresh dill
  • 1 teaspoon salt
  • 1 tablespoon garlic powder
  • 1 cup gluten free flour
  • 1 large egg
  • 1 - water

How To Make zucchini fritters

  • Step 1
    shred zucchini and carrots. Add salt, fresh chives, and dill. Let sit to get the liquids going
  • Step 2
    mix together flour, garlic powder, and any salt or pepper you might want to add
  • Step 3
    mix in shredded vegetable mixture
  • Step 4
    mix in egg and if necessary a splash or two of water, but just enough to get everything mixed well.
  • Step 5
    heat oil in a skillet. Scoop spoonfuls of batter into skillet. For small 2 or 3 inches fritters, cook 2 minutes on each side. You will need more time if they are larger. The

    The batter is REALLY sticky. I can not flatten the batter until I flip them over for the first time so sometimes I flipped them another time and let them cook a little longer.
