Ingredients

    vegetable oil
  • 3 c
    shredded , unpared zucchini, drained
  • 1/2 c
    shredded cheddar cheese
  • 3 Tbsp
    snipped parsley
  • 1 clove
    garlic, minced
  • 1
    egg
  • 1 tsp
    salt
  • ·
    dash of pepper
  • 1 c
    bisquick baking mix

How to Make ZUCCHINI CAKES

Step-by-Step

  1. Heat 1/2-inch oil in skillet. Mix zucchini, cheese, parsley, garlic, egg, salt and pepper; stir in baking mix. Drop by rounded tablespoonfuls into the oil. Fry until golden brown, about 1 minute on each side. Makes about 2 dozen.
