- 3 cups shredded , unpared zucchini, drained
- 1/2 cup shredded cheddar cheese
- 3 tablespoons snipped parsley
- 1 clove garlic, minced
- 1 - egg
- 1 teaspoon salt
- - dash of pepper
- 1 cup bisquick baking mix
How To Make zucchini cakes

Step 1Heat 1/2-inch oil in skillet. Mix zucchini, cheese, parsley, garlic, egg, salt and pepper; stir in baking mix. Drop by rounded tablespoonfuls into the oil. Fry until golden brown, about 1 minute on each side. Makes about 2 dozen.
