This is another recipe from the Vegetarian Express. They have some really nice recipes. I am not a vegetarian, but I do love veggies! I am considering adding some kind of spice or some seasoning salt, to bring out the best in this salad. The seasoning salt would replace regular salt, for me.

    zucchini, quartered lengthwise and diced
  • 1 c
    finely chopped broccoli florets
  • 1 medium
    red bell pepper, cut into strips
  • 1/4 c
    sweet pickle relish
  • 1/2 c
    reduced-fat mayonnaise or commercially prepared tofu mayonnaise
  • ·
    seasoning salt or regular salt to taste
  • ·
    black pepper to taste

How to Make Zucchini-Broccoli Relish Salad


  1. Combine all the ingredients in a serving bowl, and stir well to mix.
