When we have a lot of yellow squash this is one thing we made to use the squash so we wouldn't have any go to waste. This pie can be frozen for later use.

Ingredients

  • 1 cup evaporated milk
  • 2 - eggs
  • 1/2 cup honey
  • 1 tablespoon cinnamon
  • 2 cups cooked yellow squash
  • 1 - unbaked pie shell
  • 2 cups bread crumbs

How To Make yellow squash pie by eddie

  • Step 1
    Cube and cook yellow squash in a small amount of water until tender. Drain and cool.
  • Step 2
    In a blender blend eggs, cinnamon, and honey. Add cooked cooled squash to blender blend together 2 to 3 minutes.
  • Step 3
    Pour into a unbaked pie shell. Bake at 400 degrees for 10 minutes then 350 degrees for 35 minutes more until set
  • Step 4
    Half way through baking spread bread crumbs on top of pie.
  • Step 5
    Cool then refrigerate until cold.
