Ingredients

  • ½ cup (about 12) triscuit crackers, crushed
  • 1 tablespoon butter, melted
  • 1 package (16 oz.) frozen mixed vegetables (broccoli, red pepper, and carrots or cauliflower), thawed and drained
  • 1 can (8 oz.) sliced water chestnuts, drained
  • ½ cup sour cream
  • ½ cup shredded mild cheddar cheese
  • 1/3 cup chopped onions

How To Make very veggie casserole

  • Step 1
    Mix cracker crumbs and butter until completely blended.
  • Step 2
    Combine remaining ingredients in a 1-qt. casserole and top with remaining crumb mixture.
  • Step 3
    Bake in a preheated 350º oven for 35-40 minutes or until heated.
  • Step 4
    Serve as a side dish with any meat of your choice.
